With four kids in the house, I have to get creative with what I make for lunch.  Not only because my kids get tired of the same old thing, but I have a budget, and corn dogs just aren’t healthy all the time, lol.  Plus, we love sandwiches for lunch and dinner in the summer months.  There is nothing like a cold sandwich for dinner on a hot summer day.  Of course, when we have sandwiches for dinner, we do something super good, like turkey on pita bread with all the fixings.  Pita bread is one of my favorites; my husband loves it, and the kids think its yummy as well.

Now that it’s just my youngest daughter taking her lunch to Tuesday-TThursday school, and all other days she is home with me, we eat a lot of sandwiches.  Mattie is my picky eater when it comes to sandwiches. This mom has to get a little creative and sometimes have a little fun to make sure Mattie eats her sandwich at school.  It’s funny, but the smallest little thing, like making the jelly look like a heart, makes a sandwich taste so much better to a toddler, lol.  If you are looking for a few yummy sandwich ideas for kids, here are a few that we make.  I hope you enjoy!

Peanut Butter and Jelly Sandwich

My kids love the traditional peanut butter and jelly sandwich!  I don’t know what I would do without it some days.  My toddler is a super picky eater when it comes to sandwiches for kids.  Lucky for me, she will eat a peanut butter and jelly sandwich just about any way you can think of.

Banana and Nutella Panini

I think this is one of the kids favorites. It’s not something we make for lunch; it’s more of a dessert treat!  It’s ooey, gooey, and super easy to make.  We typically will toss them on the grill after we are done with our meal course.  They are easy to make.

I always use ½ banana per sandwich.  How many banana’s you need will depend on how many sandwiches you are making.  Once you have figured out how many bananas to use, smash your ripe bananas in a bowl until they have a nice, smooth consistency.

Get your slices of bread. I love whole wheat bread, but you can use what your family enjoys.  Butter the outside slices of bread, spread each slice of bread with Nutella, then spread the banana over the Nutella.  Toss on a medium-high grill until they are a nice golden brown color.  Not burned, my husband tries to sue the excuse he likes them burned, but he just forgets.

Peanut Butter and Banana Sandwich

You can use your kid’s favorite bread.  Slice up ½ banana per sandwich, spread peanut butter on bread, and place slices of banana over peanut butter. Place the other slice of bread on the sandwich, and enjoy.

Honey Ham and Cheese Sandwich

Make your favorite grilled ham and cheese sandwich, and just drizzle the inside of the sandwich with a little honey.  Be sure to grill this bad boy, and be careful not to put too much honey on it.  This is one of my favorites.

Cracker N’ Cheese Sandwiches

They are totally yummy, and the kids will gobble them up.  Sure, it’s a favorite of many, but if you are like me, you probably often forget about how tasty Cracker N’ Cheese is. Plus, you can add ham or turkey slices. Oh, and my youngest loves her BP & J crackers!

Pita Bread Sandwich

If you have not made a sandwich using pita bread, you are missing out.  This is one of my family’s favorites!  Anything on Pita Bread, but it’s best with cold turkey, lettuce, tomatoes, cheese, and a little bit of ranch dressing.  YUMMY!

Mexican Quesadilla’s

Mexican quesadillas are another amazing treat we love.  It’s super easy to make, and you can add anything you like.  We enjoy adding chicken, cheese, green chili, and shredded cheddar cheese.  If you have not made them before, they are super easy and only take about 15 minutes.  Grab two tortillas and butter one side of each tortilla.  Next, add all the good stuff—chicken, cheese, green chili, etc.—and grill until it’s golden brown and the cheese is melted.  Cut it up into pieces like a pizza and enjoy.

Sandwich Art

Purchase edible food coloring paint, and allow your kids to use the bread as a canvas.  If they are too small do something fun for them.  Loads of fun!

Fun Shapes

Either cut sandwiches, or purchase some molds and have fun making your child’s sandwich come to life.

Sandwich Kabob

On a kabob stick add bread cheese, veggies, and allow your kid to have a sandwich on a stick!

I’m working on more fun sandwich ideas, especially now that Mattie is gone two days out of the week and needs to take her lunch.  I will be sure to share my fun sandwich creations with you!  Don’t you worry, I will take lots of pictures when I get back from LA. Until then, my camera is packed up, and I don’t think there is any way I can get to it.
