Healthy Baked Zucchini

This baked zucchini recipe is made with fresh zucchini, seasoned to perfection, and topped with Parmesan cheese.

I stopped smoking about a month ago and have been trying to come up with ways to snack and not put on weight. So far, so good. However, I have had to get creative to keep my taste buds happy. Two of my favorite recipes are the Parmesan Squash recipe I recently posted and this recipe for baked zucchini.

Additionally, you are free to swap, add, or subject any seasonings that your taste buds don’t agree with.

Baked Zucchini

Ingredients:

  • Zucchini
  • Olive oil
  • Parsley flakes
  • Garlic salt
  • Pepper
  • Season salt
  • Parmesan cheese
  • Parmesan cheese (as topping)
Directions:

Start out by preheating the oven to 425 degrees and preparing baking sheets with nonstick spray.

Next, slice the zucchini. You want the slices to be fairly thick.

In a Ziploc bag or bowl, add the olive oil and sliced zucchini. Now, mix until all zucchini slices are coated in olive oil.

In the Ziploc bag, add all the seasonings and only 1 tablespoon of Parmesan cheese. Next, move zucchini around in the bag until the slices are coated in the seasoning.

Next, lay the zucchini out on your baking sheet and sprinkle about one tablespoon of Parmesan cheese over the tops.

Place the zucchini in the oven. Allow to bake at 425 for 20 minutes.

Lastly, remove from oven, allow to cool, and enjoy!

  • 1/8 teaspoon season salt

  • Next, slice the zucchini. You want the slices to be fairly thick.
  • In a Ziploc bag or bowl,, add the olive oil and sliced zucchini. Mix to ensure all the zucchini are covered in the olive oil.
  • In the Ziploc bag, add all the seasonings and only 1 tablespoon of Parmesan cheese. The other tablespoon will be sprinkled on the top. Now, move the zucchini in the bag or mix in the bowl until all the zucchini are evenly coated in the seasoning mixture.
  • Next, lay the zucchini out on your baking sheet and sprinkle about one tablespoon of Parmesan cheese over the tops.
  • Place in the oven and bake at 425 for about 20 minutes or until the zucchini is done.
