Start out by preheating the oven to 425 degrees and preparing baking sheets with nonstick spray.
Next, slice the zucchini. You want the slices to be fairly thick.
In a Ziploc bag or bowl,, add the olive oil and sliced zucchini. Mix to ensure all the zucchini are covered in the olive oil.
In the Ziploc bag, add all the seasonings and only 1 tablespoon of Parmesan cheese. The other tablespoon will be sprinkled on the top. Now, move the zucchini in the bag or mix in the bowl until all the zucchini are evenly coated in the seasoning mixture.
Next, lay the zucchini out on your baking sheet and sprinkle about one tablespoon of Parmesan cheese over the tops.
Place in the oven and bake at 425 for about 20 minutes or until the zucchini is done.
