This recipe for Parmesan Squash is super simple, very delicious, and a fairly healthy snack or side dish.

I quit smoking recently and have been very focused on living a healthier lifestyle, and of course this means putting a lot of focus on what I am putting into my body. I’ve come up with a few snacks that I simply love that are fairly healthy, and this is one of my favorites. My aunt actually made these for me several years back. I’ll be honest, my first thought was YUCK! Boy was I wrong; they are super tasty, fairly healthy, and you can make them with two ingredients and only need about 30 minutes.

Like I mentioned earlier, you only need two ingredients to make this recipe happen. You can find detailed ingredients and directions in the printable recipe card at the end of this post.

Parmesan Squash ingredients

Ingredients:

  • Grated Parmesan cheese
  • Squash

Directions:

Prepare baking dish with nonstick spray.

Slice the squash into about 1/2-inch slices.

Parmesan Squash

Lay squash on your baking dish and generously cover with Parmesan cheese.

Place in the oven for 20 to 25 minutes or until the squash is fully cooked. The squash should be soft around the edges.
