This past year has been a year of transformation for me in many different areas of my life; one of the biggest has been my health. I stopped smoking and took myself down a much-needed health journey. It was a process, highs and lows, ups and downs, and there was a lot of learning involved.

Regardless, none of it just came together; it’s been a process, and I’m honestly proud of my progress and, of course, very excited to share my eat-on-repeat recipe with you.

The chicken fajita-ish wraps recipe has been a recipe in the making for a bit. I wanted something that was low calorie, high protein, and filled me up because I personally need meals that fill me up if I am going to stick to any type of meal plan. This girl isn’t big on eating more smaller meals, lol. I want to eat a breakfast, lunch, and dinner that fill me up, and for me, this certainly checks all the boxes.
What boxes do my chicken fajita-ish wraps check?
- Super Low Calorie—I did some figuring, and 8 ounces has about 350 to 400 calories, which means you have plenty of room to add sour cream, avocados, and even a little salsa or cheese and still keep it super low calorie, low fat, and high protein. Just a quick size note, our Easy Sautéed Salsa Verde recipe tastes wonderful on these wraps, especially if you like the heat.
- They are delicious—Okay, let’s face it, the diet tax is real. If you want to drop pounds, you have to make changes; these changes are always the tastiest, but they certainly are rewarding. In this recipe, rather than using oil for cooking, I use chicken broth; it certainly adds a nice flavor while avoiding all those extra calories you would be getting if you cooked with oil.
- Tried and true—it works; it fills you up and keeps you full. This is one meal I ate on repeat to drop 70 pounds, and I am still eating it to this day to drop an additional 20 pounds. Like I mentioned early, about 8 ounces of this has about 350 to 400 calories, which means you can certainly eat enough to get full, and thanks to the chicken and all the extra veggies, it keeps you full.
- You can totally meal prep this bad boy—I am seriously very new to meal prep, and I’ll be honest, this is the first recipe I have meal prepped during my weight loss journey. So this recipe does make enough for about six 8-ounce servings, but you can totally toss them into freezer baggies or freezer-safe containers. I was a bit surprised, but I’ve kept these in the freezer for up to 6 days so far, and they reheat like a dream!

One-Pan Chicken Fajita-ish Wraps
This recipe, along with my Dill Tuna Lettuce Wraps, has been a huge part of my journey. I hope you enjoy it as much as I did or it inspires you to create something even tastier in your kitchen.

Ingredients:
- Jalapeños
- Green Bell Peppers
- Red Bell Pepper
- Yellow Bell Pepper
- Yellow Onion
- Green Onions
- Garlic Cloves
- Mushrooms
- Chicken Breast
- Chicken Broth
- Taco Bell Fajita Seasoning
- Romaine Lettuce
How to make the Chicken Fajita-ish Wraps:
- Start by slicing and dicing all your veggies and chicken breasts. This is really forgiving; you can slice them like you would for traditional fajitas or dice them. You do you here; it tastes the same.

Combine the veggies and the chicken in a large pan or skillet.

In a large container, add the chicken broth and the fajita seasoning packets and whisk them together and pour over your chicken and veggie mixture. This just ensures there is no clumping in your tasty fajita-ish mixture.
Allow to simmer over medium heat until all the liquid is gone. Be sure to stir now and again to keep stuff from sticking to the pan.

Place the mixture on a piece of romaine lettuce, top with your favorite toppings, and enjoy.
TIP: For me personally, the Taco Bell Fajita Seasoning is a non-negotiable. My daughter introduced me to the Taco Bell Taco Seasoning a few years back, which I used to make these Beef Taco Lettuce Wraps, and I am all about them both. Highly suggest giving them a try.
