I’ve been a fan of Sparkling ICE for years; their drinks are delicious! This specific recipe is one they shared with me back in 2013 in the Jenns Blah Blah Blog days, and it looked so delicious I knew I had to bring it over to our new home. If you’re a fan of grapefruit, this is a must-try!

If you are not familiar with Sparkling ICE, it is a zero-calorie drink that just tastes wonderful. It’s naturally pink grapefruit-flavored sparkling mountain spring water! I know, right? Yummy! And they certainly have other flavors as well.

Pink Grapefruit Sparkling Jigglers
Ingredients
- 1 bottle of Pink Grapefruit Sparkling ICE
- 1/2 cup cranberry juice
- 1/4 cup lime juice (or fresh lime juice and a dash simple syrup or agave nectar)
- 3 envelopes plain Knox gelatin
- Lime zest for garnish, if desired
Instructions
- In a saucepan, sprinkle cranberry and lime juices with gelatin. Allow it to soak for a few minutes. Heat on low, stirring constantly, until gelatin is fully dissolved (about 5 minutes). Stir in the Sparkling ICE, making sure to fully incorporate it. Pour into a pan or molds and chill until set, for several hours or overnight. To serve, cut into desired shapes.
- Garnish with the lime zest.
