I’ve been a fan of Sparkling ICE for years; their drinks are delicious! This specific recipe is one they shared with me back in 2013 in the Jenns Blah Blah Blog days, and it looked so delicious I knew I had to bring it over to our new home. If you’re a fan of grapefruit, this is a must-try!

I couldn’t help it; I had to share this wonderful Pink Grapefruit Sparkling Jigglers recipe by Sparkling ICE! I mean, what a fun homemade snack for the kids! Huge thanks to Sparkling ICE for reaching out and sharing this recipe with us.

If you are not familiar with Sparkling ICE, it is a zero-calorie drink that just tastes wonderful. It’s naturally pink grapefruit-flavored sparkling mountain spring water! I know, right? Yummy! And they certainly have other flavors as well.

Pink Grapefruit Sparkling Jigglers

Ingredients

  • 1 bottle of Pink Grapefruit Sparkling ICE
  • 1/2 cup cranberry juice
  • 1/4 cup lime juice (or fresh lime juice and a dash simple syrup or agave nectar)
  • 3 envelopes plain Knox gelatin
  • Lime zest for garnish, if desired

Instructions

  • In a saucepan, sprinkle cranberry and lime juices with gelatin. Allow it to soak for a few minutes. Heat on low, stirring constantly, until gelatin is fully dissolved (about 5 minutes). Stir in the Sparkling ICE, making sure to fully incorporate it. Pour into a pan or molds and chill until set, for several hours or overnight. To serve, cut into desired shapes.
  • Garnish with the lime zest.

I very rarely purchase sodas for my kids, but we always have Sparkling ICE beverages around. If you haven’t tried them, THEY ROCK, and I’m going to bet these these pink grapefuit sparkling jigglers are not just fun for the kids but adults too.
