Not only are they a cute and tasty sweet treat for the fatst approaching holiday season, they are fun and without a doubt something you can create in the kitchen with the kids.

Chocolate Covered Marshmallow Penguins
Equipment
- wax paper
Ingredients
- 1 bag of jumbo marshmallows
- 1 bag of candy melts
- 1 package of small edible eyes
- 2 boxes of Mike and Ike’s
- Cookie sheets fitted with parchment or wax paper
Instructions
- Using a double boiler, microwave or melting pot, melt your chocolate.microwave,
- Mix your chocolate until melted, and stir continuously.
- Using your fingers, dip a marshmallow into the melted chocolate about 1/4 of the way, turn the marshmallow to the side, and dip it into the melted chocolate about 1/4 of the way. Repeat with the other side. Make sure you don’t dip too far into the melted chocolate. There needs to be a square of the marshmallow that is not dipped, which will be the penguin’s stomach.
- Lightly shake the marshmallow so that excess chocolate can fall off.
- Place the marshmallows on the parchment paper.
- Repeat the steps until most of the melted chocolate is used.
- Place the chocolate-covered marshmallow penguins in the fridge for about 10 to 15 minutes, or until hardened.
- With a toothpick, dip into the remaining melted chocolate.
- Dap the toothpick onto the back of the edible eye; the melted chocolate will act like glue so the eyes stick to your penguin.
- Place the eye on the middle part of the chocolate that acts as a penguin’s forehead.
- Repeat the step with the second eye.
- Take an orange Mike and Ike candy and cut the bottom part off. Dip the bottom of the Mike and Ike into melted chocolate and place it under the eyes of the penguins.
- Repeat the steps for the remaining penguins.
