We certainly couldn’t leave this blast from the past behind in our rebrand to Half Baked Media. Outshine, are still a special treat in my house almost 10 years later.

As a mommy of four, you better believe I stay mindful of what my family and I eat, see that we are living an active lifestyle, and am consistently planning and maintaining structure so that we get the most out of each day and make sure we have the time to concentrate on the people and things we love. With summer here, it’s time to start thinking yummy yet cold snacks, like Outshine Fruit and Yogurt Bars. Now if you have not tried these, this is your sign! They are AMAZING!

Creamy Coconut Fruit Bars with Chocolate Drizzle

When we care about what is on the inside, it shines through on the outside! Which is why we love the Outshine! They believe that the brightest and most colorful lives are the ones that live with purpose and passion. Yes, lives like mine and yours. To help you be your best self, Outshine uses fresh, healthy ingredients in their frozen fruit and yogurt bars. They are by far my favorite bars because they don’t just want us to snack; they want us to shine! And, trust me, I can use all the shine I can get, lol. And, it’s certainly a message I can still get behind almost 10 years later.

The girls loved their Outshine Fruit Bars! It was the perfect snack for a hot day! Now we are off to start getting the pool set up because our Outshine bar snack gave us the extra boost we needed on this hot day to tackle cleaning up the pool!

I love all the Outshine Fruit and Yogurt Bars, but I must tell you that the Creamy Coconut, Lime, and Strawberry are by far my favorite. I still remember the first time I tried one; I was in high school, and OMG, they are so amazing, and over the years they have added so many more amazing flavors, but the fruit bars still taste just as good as they did when I was a kid.

Before Outshine, my parents would give us ice cream or, if we were lucky, a root beer float! Don’t get me wrong, it’s cold and tastes fabulous too, but it turns out ice cream really isn’t that good for you. Yup, I know. Bummer, right? However, Outshine bars are made with real fruit/fruit juices and are pretty low in calories too, especially if you go with the fruit bars, which are dairy-free. Since I love fruit, that is not a problem for me.

I recently made some creamy coconut fruit bars with a chocolate drizzle that were AMAZING! Usually, I don’t add the little bit of chocolate, but the girls had been playing outside all day, and they wanted me to add a little sweetness, and it was a great idea! It didn’t take a lot either, just a tiny bit of chocolate. However, they are amazing without chocolate too.

Creamy Coconut Fruit Bars with Chocolate Drizzle

Cool down this summer while giving your Outshine creamy coconut fruit bars a level up. These count fruit bars are delish, and you can quickly upgrade them by simply melting chocolate, drizzling on top and allowing to harden. Such a sweet way to stay cool outside this summer.

Ingredients
  

  • 3 Outshine Creamy Coconut Fruit Bars
  • Chocolate (You don't need a lot just enough to drizzle on top. This will vary depending on tastebuds.)

Instructions
 

  • Melt chocolate.
  • Drizzle on your fruit bar and allow to harden. Typically happens rather quickly because the bars are cold.
  • Enjoy.

How ironic! I have Outshine Pomegranate Bars in my freezer right now! They are delicious!
I haven’t tried the coconut ones, but I will so I can try this yummy recipe! This will keep my chocolate cravings in tact also!

Really loved this post and tried it with my nephew over the weekend. He LOVED it!

As for me.. I had a craving for coffee which made me hunt the kitchen shelves and low and behold, I had some instant coffee in the back.

Sprinkling my ice with that was SO good and so much better than having a hot cup of coffee on a warm day.
