Ingredients
Cake
2 1/4cupsflour(I used Bob’s Red Mills All-Purpose Flour)
1/3cupsgranulated sugar
1/3cupsbrown sugar
3/4cups butter
1/2teaspoonbaking soda
1/2 teaspoon basking soda
1 teaspoonsalt
1large egg
3/4cupssour cream
Filling
1teaspoonvanilla
8ouncescream cheese
1cancherry pie filling (21 ounces)
1/4cupssugar
1largeegg
Crumble Topping
2 1/2tablespoonsbutter (softened at room temp)
1/3cupsflour(I used Bob’s Red Mill All-Purpose Flour)
1/4cupsquick oats
1/3cupsbrown sugar packed)
1/4teaspooncinnamon
Instructions
Cake
Preheat the oven to 350 degrees. Grease a 9×9 pan.
Combine the flour and sugar in a large mixing bowl.
Cut in the butter until it is crumbly.
Next, combine the flour, baking powder, baking soda, salt, and both sugars in a large mixing bowl. Cut in butter until it's crumbly. Using a mixer, mix completely. Add the egg, vanilla, and sour cream and mix together.
Remove from about 1/2 cup or more and set aside for later.
Pour into bottom of prepared pan.
Filling
Combine cream cheese, egg, and sugar and mix together.
Slowly pour over the batter already in the pan, add the cherry pie filling and sprinkle with the crust you set aside for later. Slowly pour over the batter already in the pan Add cherry pie filling.
Get a small spoon and spoon the leftover batter over the top of the cherry pie fillings.
You probably will not have enough batter to cover the whole top, which is okay.
Crumble Topping
Combine all the ingredients for the crumble topping in a medium sized bowl.
Use a fork or pastry blender and combine ingredients until it becomes a crumble mixture.
Sprinkle over the top of your cake and lightly press down using your hand. Place in oven for 20 to 30 minutes or until you can put a toothpick in the center of the cake and it comes out
